Favourite Lunch Recipes for Children – Part Two

As parents we know how important it is for our children to eat a healthy balanced diet rich in fruits and vegetables.  Getting our children to eat their 5 A Day though can be tough.

The NHS website advises anyone, including the parents of small children to, ‘Try adding chopped carrots to bolognese sauce, sprinkle chopped red peppers on your pasta, or mix veg such as peas into mashed potato to make it even tastier. Add tomatoes to your omelette or mushrooms to your next stir-fry.’ We think these sound like great ideas.  Why not have a look at all their tips here?

In this our second post where we share recipe ideas from our own Chef Andy and the Circus Kitchen, we’ve decided to include a big favourite of the children here at Circus Day Nursery – Moussaka – plus some additional healthy snack ideas.

Moussaka

Mix Quorn mince, sliced courgettes, diced onion, sliced mushrooms, tinned tomatoes and a tin of baked beans, together and pour into an overproof container and bake in a 200C/400F/Gas 6 oven for 45 mins.  Add layers of sliced par-cooked potatoes over the top and add white sauce or cheese sauce.  Pop back into the oven for a further 30 mins until golden brown.

Healthy Snacks

Carrot or pepper sticks or cut up raw cauliflower or other vegetables with quick tzatziki dip (low fat greek yoghurt, mixed with a teaspoon of mint sauce and finely chopped cucumber)
Boiled egg finely chopped and mixed with red pepper and low fat mayonnaise served in a wrap
Sliced pita bread toasted served with a hummus dip

Delicious Smoothies

Throw your child’s favourite fresh or frozen fruits into a blender with milk or fruit juice, blend and voila – a tasty way to increase your child’s fruit intake.
